Although tight and austere, like all good Chablis, this is still a luscious and generous wine with lemon, chalky mineral flavours and hints of honey. Ultra dry with bracing acidity, this wine requires some patience while it builds a healthy trajectory of flavour and intensity. Undoubtedly one of the best examples of Chardonnay going around.

    This has long been one of the best run wine co-ops in the world. In this case, the focus is 100% Chablis. This Cote de Lechet offering is from 25 year old vines that come from a south eastern facing slope. Since this is a wine region that struggles to fully ripen the fruit, the aspect of the vineyard makes all the difference. If you're a fan of Chablis, consider yourself part of the group that is in the know! If you don't know about it, here's your chance to try one of the most distinctive wines from anywhere in the world. Yes it’s made from Chardonnay, but it’s an expression that cannot be replicated anywhere else. When the wines are just a couple of years old, the character is minerally, flinty, fresh, ultra pure and lively with length and complexity. With a bit more age, the wine shows a broader, richer range. There's an intense spine of acidity that holds it all together. While this is the ideal candidate for the cellar, don’t feel too guilty of you choose to pop it whenever the mood strikes.

    This is a beautiful style of Chablis. Excellent display of citrus fruits, beautiful minerality, with a subtle honey finish. A great example of Chablis. Great for a Sunday lunch.
